Western red cedar (Thuja occidentalis), commonly known as white cedar, is a conifer native to eastern Canada and the United States. It can reach 15 to 20 m in height under normal conditions, sometimes more in favorable environments. Its silhouette is often narrow and conical in young specimens, then widens with age. Its leaves, in the form of small scales tightly packed on flattened twigs, are a brilliant dark green. The reddish-brown bark exfoliates in long strips. Western red cedar thrives in both humid forests and shallow calcareous soils, where other species struggle to establish themselves.

Medicinal and Culinary Uses
Western red cedar has antiseptic, antiviral, antifungal, anti-inflammatory, expectorant, and diuretic properties. Its leaves can be used in infusions, rich in vitamin C and beneficial active compounds.

In cooking, its resinous-scented foliage adds a distinctive forest touch. Used sparingly, it can flavor various savory or sweet dishes. It is also used in the preparation of syrups and jellies.

Warning: Due to the presence of thujone, a potentially toxic substance in high doses, its use should be occasional and moderate. Regular consumption is not recommended without medical advice, and cedar is contraindicated for pregnant or breastfeeding women, children, and individuals suffering from neurological, liver, kidney, or autoimmune disorders.

Ecological Roles
Western red cedar plays an important ecological role in wetlands and calcareous environments. It helps stabilize soils and protect banks against erosion. Its dense branches provide shelter for many birds and small mammals, while its persistent foliage is a food source for deer in winter.
