Yellow birch (Betula alleghaniensis), often mistakenly called cherry birch, is a majestic tree reaching 15 to 25 meters in height, characterized by its smooth, shiny bark of golden yellow to brown. This birch is the only one of its kind to grow in the shade, making it an ideal choice for dense forests and shaded areas. It particularly appreciates fresh soil and thrives near streams, where humidity is abundant. Young trees have smooth bark, but it curls and peels with age, revealing magnificent shades of golden grey. In addition to its aesthetic qualities, yellow birch is also the emblematic tree of the province of Quebec, symbolizing the beauty and richness of Quebec's forests.

Furthermore, birches (Betula spp.) are recognized as keystone plants for biodiversity in many North American ecoregions, as they support a wide diversity of insects and birds that use their leaves, bark, and seeds.

Medicinal and culinary uses
The young leaves of the yellow birch are edible and can be eaten raw in salads or infused to prepare herbal teas. They have the same taste as wintergreen, thanks to the presence of methyl salicylate, an organic compound that has a distinct smell and taste, often associated with the "Wintergreen" or wintergreen tea flavor.

The sap is also edible and can be reduced to syrup even if the sugar content is lower than maple sap.

Ecological role
Yellow birch plays a key role in the forest ecosystem, serving as a habitat and food source for many birds and small mammals. Its leaves are food for the larvae of various insects, while its bark and branches offer refuge to wildlife. As a pioneer plant, it also contributes to the establishment of vegetation in disturbed areas.
