Water parsnip (Sium suave) is a perennial plant native to Quebec's wetlands, recognizable by its hollow, slender stem that can reach 1 meter in height. Its compound leaves, deeply cut and bright green, unfold around its stem and elegantly contrast with its umbel-shaped inflorescences. In summer, from July to September, small white flowers bloom in delicate clusters, adding lightness to banks, marshes, and ditches. Adapted to humid soils rich in organic matter, water parsnip thrives in sunny or partially shaded areas, where it can bring a touch of freshness and biodiversity.

Medicinal and culinary uses
The root of water parsnip is edible, but be careful not to confuse it with spotted water hemlock, which is dangerously toxic. Crunchy and delicious, it has a pleasant, slightly nutty flavor. It is harvested in spring or fall.

Water parsnip is an important component of Quebec's wetland ecosystems. Its flowers attract several pollinators, including bees and certain beetles. The hollow stems and thick roots also provide habitat for aquatic microfauna, and its root system helps stabilize banks, reducing soil erosion in wetland environments.
