🍂 Gingerbread, Date, and Apple Loaf – Comforting Autumn Recipe
There's nothing quite as comforting as the aroma of spices dancing in the air on an autumn weekend. I've revisited a classic: gingerbread, adding soft dates and fresh grated apples for a tender texture and fruity flavor. This homemade gingerbread loaf is perfect for breakfast or as a gourmet snack.
🧄 Ingredients for a Moist and Flavorful Loaf:
- 250 ml (1 cup) pitted dates
- 80 ml (1/3 cup) unsweetened applesauce
- 80 ml (1/3 cup) molasses
- 2 eggs
- 125 ml (1/2 cup) milk
- 500 ml (2 cups) all-purpose flour
- 8 ml (1 1/2 tsp) baking powder
- 5 ml (1 tsp) baking soda
- 5 ml (1 tsp) ground cinnamon
- 5 ml (1 tsp) ground ginger
- 5 ml (1 tsp) ground nutmeg
- 2 ml (1/2 tsp) ground cloves
- A pinch of salt
- 2 grated apples
👩🍳 Step-by-Step Preparation:
- Preheat oven to 180 °C (350 °F).
- In a bowl, cover dates with boiling water and let stand for 10 minutes to soften.
- In a large mixing bowl, mix applesauce, molasses, eggs, and milk.
- Add the drained dates and grated apples.
- Gently fold in the dry ingredients (flour, leavening agents, spices).
💡 Baker's Tip: Mix just enough to combine the ingredients. Overmixing will make the loaf dense.
